I say “back to school” like I’m experienced at this, but this is my first year as a school mom. Newbie at back to school, but SUPER experienced at dinners that need to be ready the second you arrive home and shouting stuff like “the sink is not a basketball hoop!” during meal times. So I feel like I’m coming at it from a different angle, but I still getcha.
These are my go-to dinner favorites, starring my kitchen appliance BFF, the ol’ Crockpot. All of these can go for 8 hours plus, so pop it in during the morning chaos, eat it during the evening chaos and use a slow cooker liner to save yourself some clean up and call the day a win! And these are all low on ingredients and time, but high on taste. Here are my go-to Crockpot dinners for busy nights …
Crockpot Sausage Corn Chowder
Need an easy and hearty soup that cooks while you’re away and is ready when you are? Crockpot Sausage Corn Chowder is one of our dinner faves and is a go-to busy weeknight meal! Get the full recipe here.
3-Ingredient Crockpot Dinner
Anyone else recovering from a busy week and feel like they just can’t on dinner? I’ve got you. This 3-ingredient Crockpot Sausage Dinner comes together with almost zero prep and cooks up all day in the slow cooker so it’s ready when you are plus it won’t heat up your kitchen. Oh yeah ~ and it’s a total taste sensation. Get the full recipe here.
Crockpot Beer Brats
Crockpot Beer Brats are an easy weeknight dinner that is ready to eat when you are. Perfect for busy weeknights! Side note, I recently heard brats in the Crockpot referred to as “brats in a hot tub” and will be referring to them as nothing else in my offline life :). Get the full recipe here.
Crockpot Taco Meat
Crockpot Taco Meat is a staple in our house. Dump everything in the crockpot in the morning, and flavorful crockpot taco meat is ready when you are! Forget to defrost your ground beef? No problem — this works equally well with frozen or defrosted beef. Get the full recipe here.
Captain’s Soup
Captain Soup is an easy peasy cold weather dinner that cooks up in the slow cooker and is ready to go the moment you hit the door! It’s loaded with veggies and specifically calls for frozen ones, so no prepping or chopping from you! Get the full recipe here.
Hopefully this will give you some easy go-to dinners to add to your rotation! Hope you have a great week!
