Before you had kids, did you ever think, “I’ll never …” Literally insert anything here and I’ve probably done it. Like before I had kids I thought I’d really make my kids tow the line, but in reality — meh, sometimes. The other day my husband took the boys out to eat while I was at work. When I returned, my husband said that my 5 year old had not behaved at all and I turned to look super stern … until I found out what the infraction was. When my husband wasn’t looking, apparently my son had locked the door of the local Arby’s. People were pulling on the door, trying to come in and watching other people at the Arby’s eating an wondering why they couldn’t get in. I honestly had to leave the room I was laughing so hard. So there goes my Mother of the Year award :).
So because we can never leave our home again to dine out, here is a quick and simple dinner recipe. Perfect for dinners when you are no longer welcome in local restaurants, or for a fun game day or party recipe too.
Barbecue Chicken Nachos How-to
This recipe is seriously the easiest of easy. Grab your tortilla chips — I have found Tostitos Cantina Thin & Crispy Tortilla Chips to be seriously THE best ever. No contest. Sprinkle your chips with cooked chicken. I try to have some on hand in the freezer, or rotisserie chicken works great here too.
Give it a little barbecue sauce drizzle — we’re partial to Sweet Baby Ray’s but anything will work. And this is the beauty of this recipe: I’ve never really measured anything, but it’s always turned out great. Drizzle the sauce, slather on the sauce, totally your call.
Top with some mozzarella (side note: I don’t really measure this recipe, but I rarely measure cheese in any recipe. Can we go wrong with more cheesy deliciousness? I think not.) Add on some cilantro just to be social and pop it in the oven (or toaster oven works great for weekday meals) at 350° for about 10-15 minutes or until the cheese is melty to your standards.
Serve them up with some sour cream and add in a few veggie sides and you’ve got dinner on the table in no time.

- Tortilla chips (I highly recommend Tostitos Cantina Thin & Crispy)
- Shredded cooked chicken
- Barbecue sauce
- Mozzarella
- Cilantro
- Preheat the oven to 350°
- Spread tortilla chips on a baking sheet
- Sprinkle with shredded chicken
- Drizzle with barbecue sauce
- Cover with shredded mozzarella cheese
- Sprinkle with cilantro
- Bake for 10-15 minutes, or until cheese is melty
