Oven Fried Chicken is an easy dinner that’s a taste sensation. Basically if you can shake chicken in a bag and have a working oven, you’re about 90% of the way the way to enjoying a delicious fried chicken dupe.
After having kids, I hit the lowest of low levels with want/ability to make dinners. One time shortly after having my second son I served a shredded rotisserie chicken as a dinner and that was pretty high falutin’ for me at that time. Just a straight up pile of chicken on a plate. You’re welcome, family!
Well during that time on the dinner struggle bus, my husband made the innocent suggestion that what sounded really good for dinner was homemade fried chicken. Umm, cue the record scratch. A pile of chicken at that point was my pinnacle peak best dinner. You’re sweet, husband but when someone can barely push the buttons on a toaster oven to pull out some pizza rolls, there’s no way that person is going to fry up a chicken.
I’ve gotten a little more extravagant on what I serve — hehe, sometimes. But I did find a compromise with “easy” and “homemade fried chicken”. Oven Fried Chicken is an easy dinner recipe that’s low on work and high on taste. Basically everything I look for in a recipe.
Oven Fried Chicken How-to
Put a stick of butter into a 9×13 pan and let it melt while you preheat the oven to 425°. Take two pounds of chicken breasts and cut them into strips. Place one cup of flour, 1 t. of salt, 1 T of smoked paprika and a shake of pepper into a plastic ziploc bag.
Shake the cut up chicken in the bag with the flour mixture and place it in the pan on top of the butter. Give the chicken a shake of garlic salt and bake it for 30 minutes, then flip it over and cook it 25-30 minutes more.
Can I just say that the smell while this was cooking was absolutely torture! Like every second of the cooking process was impossible to resist.
You can make gravy from the pan drippings. I literally have never done this, but if you do, please invite me over. This dinner is a favorite at our house and gives you that Sunday dinner vibe, without the “slaved away in the kitchen” effort level. Enjoy!
