S’mores Cookies

 S’mores Cookies start with a cookie mix and mixes in pre-crushed graham cracker crumbs and mini marshmallow bits for an easy and quick s’mores twist on the classic chocolate chip cookie.

My son and I were discussing what if dinosaurs came back to earth and he got me to promise that if they did, we would get one as a pet.  Can I just say that the way 2020 is going I feel like nothing is off the table?  Like maybe I should get some dinosaur supplies just in case this ends up becoming a reality.

But in cookie news, if you’re looking for an easy summer twist on chocolate chip cookies, this s’mores cookie recipe is as easy and delicious as they come.  I use a cookie mix, pre-crushed graham cracker crumbs and mini marshmallow bits for maximum s’mores taste, but minimum preparation time.

S’mores Cookies How-to

Grab your favorite chocolate chip cookie mix (I used Betty Crocker) and prepare it per the package directions.  Stir in graham cracker crumbs and the mini marshmallow bits and you’re set!  Back in the old days — AKA pre-kids — I used to crush the graham crackers by hand.  Then I found boxed graham cracker crumbs and was like lololol never again.

I’ve tried s’mores cookies with mini marshmallows vs. the bits and they’re great right out of the oven, but the marshmallows just get weird and tough as early as the next day.   And not saying I couldn’t eat a dozen cookies directly out of the oven, just that I don’t want to feel pressured into it for cookie quality reasons.
